The Chia Loaf was a big hit with everyone. By far, this is our favorite recipe. It toasted beautifully, the texture was nice (a bit dense and chewy, but in a good way) and the flavor was very mild.
My youngest son asked for seconds! EVERYONE is having it for breakfast again tomorrow.

The color of our starter is a light purple...kind of fun! The waffles come out crunchy and chewy at the same time. I have been keeping a starter going on my counter and that is working out well.

Thank you for all the update recipe emails and the revised version of The Art of Gluten Free Sourdough Baking. I just wanted to let you know that the revisions are excellent, the book is much better organized and the recipes are very easy to follow now. I have been enjoying baking more then ever!
My gluten-intolerant daughter is so happy, but what's even greater is that her sister, who does not have the allergies, has been loving all the breads and muffins and now I don't have to have separate breads for all the different members of the family. We all love them and eat them! I have been looking for sourdough, gluten-free, yeast-free, dairy-free recipes for 3 years now, and I have to say, you are a God-send. So thank you!:)

HI Sharon, Since the first day of eating these sourdough recipes, my body has said YES! Clearly I needed this bread even though I was just looking for the sourdough taste experience…Who knew?!
On the second day after eating the breads from class, I started to feel better. My starter is in the fridge and I have been dutifully feeding it. I am grateful that it doesn’t have to be walked.
I have to tell you something interesting: not one crumb has gone to waste here. Every time I get the sourdough breads out the dogs, especially those with digestive issues, come running. I haven’t been able to bring myself to part with even one bite of my precious stuff but I thought that if you ever have a recipe that doesn’t turn out fine enough for humans, let me know and I will buy it from you and let the dogs have it...They keep asking for it!

Yesterday I served my husband one of the pancakes I came home with. As I was preparing it (toasting, buttering) I said "Now, this is not anything like a regular pancake, so try to just take it for what it is and see what you think." He ate it slowly and thoughtfully, and said "Gluten free pancake, gluten free cake, free cake.. let's call it a Free Cake!" And by the time he was done with it, he pronounced it Quite Good.
My son also ate it thoughtfully and said it was quite good. These are shining accolades, given that there is no wheat
in them.
This morning, we had the bread, toasted, with eggs for breakfast. My visiting sister-in-law said it tasted like pudding (I'd cautioned her similarly that this was not anything like regular bread) and she ate two pieces. I really enjoyed working with you, Sharon. Thank you!"
