Before the industrialization of pickles and condiments, Lactofermentation was the time tested technique used by cultures all over the globe for thousands of years using only salt, water and the vegetables. This very potent food is full of natural probiotics and enzymes and becomes a natural digestive aid in the diet fostering intestinal health. This hands-on class includes the basics of lactofermented sauerkraut and cucumber pickles. In this 4-hour class we will explore 10 recipes that gently foster intestinal recovery. This combination of raw, fermented and cooked recipes can easily be made in your own kitchen. We will study Kombucha tea, Water Kefir, Congee, Healing Soup stocks, Beet kvass, Sauerkraut and soaking as an essential food prep technique. We will explore the principles of gentle body detoxification and learn muscle testing for food sensitivities. Learn the basics of creating a gluten free sourdough starter. This technique is suitable for people sensitive to gluten, dairy, eggs, yeast, corn, and soy. We will go through all the steps of creating a living gluten free sourdough starter. We will then use the starter to make savory pancakes and idlis (Indian steamed bread) that are free of gluten, dairy and eggs.
