We will go through all the steps of creating a living gluten free sourdough starter. We will then use the starter to make savory pancakes and idlis (Indian steamed bread) that are free of gluten, dairy and eggs.

Class Content

This hands-on class includes the basics of lactofermented sauerkraut and cucumber pickles plus detailed recipes for less common vegetables like summer squash, swiss chard, winter squash, root vegetables, rhubarb, rutabaga, kohlrabi, snap peas and others. If you have a garden or belong to a CSA (community supported agriculture), this course will also teach you how to pickle parts of the vegetables that are commonly composted. Less waste, more food! You will go home with a manual of recipes and 2 jars of lactofermented vegetables!

In this 3-hour class we will prepare and cook 6 gluten-free grains: Brown rice, buckwheat, amaranth, teff, quinoa and millet. We will also explore how to use them in meals, desserts and snacks. Tuition includes all materials and food. I will serve a snack.
