The Lacto-Fermentation book includes the basics of lactofermented sauerkraut and cucumber pickles plus detailed recipes and handling for less common vegetables like summer squash, swiss chard, root vegetables, rhubarb, rutabaga, kohlrabi, snap peas, garlic scapes, vegetable stems and daylily buds!
If you have a garden or belong to a CSA (community supported agriculture), this book will also teach you to pickle parts of the vegetables that are commonly composted. Less waste, more food!
